Acidified sodium chlorite is an antimicrobial wash used on poultry, meat, seafood and produce during processing. It is applied to the surface and rinsed, rather than being an ingredient.

Made by acidifying a sodium chlorite solution, which releases chlorous acid, the active antimicrobial. It decomposes to chloride and chlorate.
