Animal lipase is an enzyme used in cheesemaking to develop the sharp, piquant flavours of Italian cheeses such as Pecorino and Provolone. It is animal-derived and has no fermentation equivalent for this particular flavour effect.
Where it is and isn’t permitted

What it is made from
Extracted from the forestomach tissue of calves, kids or lambs, or from animal pancreatic tissue. There is no way to obtain this specific enzyme without slaughter, which is why cheeses relying on it cannot be made vegetarian.
