Ascorbyl palmitate is a fat-soluble form of vitamin C, used to stop oils and fatty foods going rancid where ordinary ascorbic acid would not dissolve.

Made by esterifying ascorbic acid with palmitic acid. The ascorbic acid is fermentation-derived; the palmitic acid may come from palm oil or animal fat and is not usually declared.
