Cyclamic acid

Used as a sweetener.

Cyclamic acid is the parent acid of the cyclamate sweeteners, about thirty times as sweet as sugar. It is permitted in the European Union and by Codex but prohibited in the United States, one of the clearest standing disagreements between regulators.

What it is made from

Made by sulfonating cyclohexylamine, a petroleum-derived intermediate. In food it is normally used as the sodium or calcium salt rather than the free acid.
