These are steviol glycosides made by converting the glycosides extracted from stevia leaves into other forms using enzymes. The purpose is to obtain more of the better-tasting glycosides, such as rebaudioside M, than the leaf itself provides.

What it is made from

Leaf-extracted steviol glycosides are treated with enzymes that add glucose units, converting abundant but less palatable glycosides into scarcer ones. Codex lists these separately from leaf extract because the process, and therefore the specification, differs.
