Invert sugar is sucrose split into its two halves, glucose and fructose. It is sweeter than the sugar it came from, resists crystallising and holds moisture, which is why it is used in confectionery and soft-centred sweets.

What it is made from
Made by hydrolysing sucrose with acid or with the enzyme invertase. The name comes from the way the split reverses the direction in which the solution rotates polarised light.
