Potassium iodide is the additive behind iodised salt, one of the most effective public-health measures ever taken with a food additive. Iodine deficiency was the leading preventable cause of intellectual disability before salt iodisation.

What it is made from

Produced by reacting iodine with potassium hydroxide. It oxidises and is slowly lost from salt in warm, humid conditions, which is why iodate is preferred in some climates.
