Sucralose is an intense sweetener roughly six hundred times as sweet as sugar and stable enough to be used in baking. It is found in soft drinks, tabletop sweeteners, dairy products and baked goods.

What it is made from

Made from sucrose by selectively replacing three hydroxyl groups with chlorine atoms. It therefore starts from ordinary cane or beet sugar but is not itself a sugar, and most of it passes through the body unabsorbed.
