Used as an acidity regulator — Codex also lists it as emulsifying salt, firming agent, flour, treatment agent, thickener.
Calcium lactate is a firming agent, acidity regulator and calcium source, used in canned fruit and vegetables and in cheese. It is also the calcium salt used in spherification.
