Ferric pyrophosphate is an iron fortificant used in cereals, flour and infant foods. It is chosen over more soluble iron salts because it causes less discolouration and off-flavour.

What it is made from
Made by reacting an iron salt with pyrophosphate. Its low solubility is both the reason it does not spoil the food and the reason its absorption is lower than other iron salts.
