Used as a flavour enhancer.
Inosinic acid is a savoury flavour enhancer that barely tastes of anything alone. Its power is in combination: with glutamate it multiplies savoury intensity many times over, which is why Japanese dashi pairs kombu seaweed with dried bonito rather than using either by itself.

What it is made from
Produced by bacterial fermentation, or by hydrolysing yeast RNA. It occurs naturally in meat and fish — bonito flakes are the classic source — and the commercial route is not usually declared.
