Used as an emulsifier — Codex also lists it as anticaking agent, antifoaming agent.
Polydimethylsiloxane is an antifoaming agent, added to frying oil so it does not foam over and to processing lines where foam would stop the machinery. It is a silicone — the same family as Silly Putty and bathroom sealant.
