Sodium carboxymethyl cellulose, enzymatically hydrolysed (Cellulose gum, enzymatically hydrolyzed)
SODIUM CARBOXYMETHYL CELLULOSE, ENZYMATICALLY HYDROLYSED (CELLULOSE GUM, ENZYMATICALLY HYDROLYZED) · 469INS 469
Used as a thickener — Codex also lists it as stabilizer.
Enzymatically hydrolysed cellulose gum is a shorter-chain version of the familiar thickener, giving lower viscosity at the same concentration — useful where the stabilising effect is wanted without the thickness.
