Used as a preservative.

Sorbic acid is one of the most widely used food preservatives, effective against moulds and yeasts. It is found in cheese, baked goods, dried fruit, wine and soft drinks, usually as its potassium salt.

What it is made from

First isolated from the berries of the rowan tree, from which it takes its name, but produced commercially by chemical synthesis — typically the condensation of crotonaldehyde with ketene, both petroleum-derived. No animal material is involved.
