Used as a preservative — Codex also lists it as antioxidant, bleaching agent, flour treatment agent.
Sulfur dioxide is a preservative and antioxidant used in wine, dried fruit, fruit juices and some processed potato products. It is one of the additives that must be declared as an allergen in many jurisdictions above a threshold concentration.

What it is made from
Produced by burning elemental sulfur or as a by-product of metal smelting, then purified. In winemaking it is often added as potassium metabisulfite, which releases it. No animal material is involved.
