Acidic sodium aluminium phosphate is a slow-acting raising agent used in self-raising flour, cake mixes and refrigerated doughs, where the rise needs to happen in the oven rather than in the bowl.

What it is made from

Made by reacting phosphoric acid with sodium and aluminium compounds. It is one of the few food additives that contributes dietary aluminium, which regulators assess separately from the additive's own function.
