Used as an acidity regulator — Codex also lists it as anticaking agent, emulsifier, humectant, raising agent, stabilizer, thickener.
Calcium phosphate is a raising agent acid, anticaking agent, firming agent and calcium fortificant. It is also, as hydroxyapatite, the mineral of bone and teeth — though the additive is made from rock rather than from bone.
