Carob bean gum, also called locust bean gum, is a thickener from the seed of the carob tree. It is used in ice cream, cream cheese and sauces, and works particularly well combined with xanthan or carrageenan.

What it is made from

Milled from the endosperm of the seed of Ceratonia siliqua, the carob tree of the Mediterranean. The process is mechanical separation and grinding.
