Used as an emulsifier — Codex also lists it as carrier, gelling agent, glazing, agent, humectant, stabilizer, thickener.
Konjac flour is a thickener from the corm of the konjac plant, used in jellies, noodles and as a fat replacer. Its very firm gels are why konjac jelly cups carry choking warnings in several countries.
