Used as an emulsifier — Codex also lists it as stabilizer.
Polysorbate 80 is one of the most widely used emulsifiers in food, found in ice cream, dressings, sauces and drinks. It keeps oil and water mixed where a fat-soluble emulsifier alone cannot.

What it is made from
Made by attaching about twenty ethylene oxide units to sorbitan monooleate. The ethylene oxide is petroleum-derived; the oleic acid may be plant or animal in origin.
