Sucrose esters are emulsifiers built on a sugar backbone rather than glycerol, used in baked goods, dairy products and coatings for fresh fruit. Their properties can be tuned by how many fatty acids are attached.

Made by esterifying sucrose with fatty acids. The sucrose comes from cane or beet; the fatty acids may be plant or animal in origin and are not usually declared.
