Sorbitan monostearate is an emulsifier used in cake icings, whipped toppings, confectionery coatings and yeast. It is often paired with a polysorbate, which is its water-loving counterpart.

Made by esterifying sorbitol with stearic acid. The sorbitol comes from starch; the stearic acid may be of plant or animal origin and is not usually declared.
