Xanthan gum is a thickener and stabiliser produced by bacterial fermentation, widely used in sauces, dressings, gluten-free baking and plant-based drinks. Small quantities produce a marked increase in viscosity.

What it is made from

Produced by fermenting a sugar feedstock — commonly glucose from maize, but also from wheat, soy or dairy substrates — with the bacterium Xanthomonas campestris, then precipitating the gum with alcohol and drying it. The carbohydrate source is not usually declared, which matters to people avoiding specific allergens.
